Ingredients
1 cup finely grated cucumber
1 cup thick greek yogurt
2 garlic cloves
1 tbsp. extra-virgin olive oil
1 tsp lemon juice
1 tsp chili flakes
Salt to taste
Some chopped mint leaves
Ingredients
Drain the grated cucumber through a fine mesh sieve.
Place grated cucumber on a towel and gently squeeze out a bit of the excess water. Set aside briefly.
In a bowl, combine the cucumber, yogurt, lemon juice, olive oil, chili flakes, garlic, salt and mint.
Chill until ready to use. When ready to serve, stir the sauce to refresh and transfer to serving bowl, drizzle with more extra virgin olive oil.
